Pasquini's Italian restaurant is a Denver original with three other popular restaurants located on South Broadway, along 17th Avenue and Humboldt Streets and in Louisville, Colorado. The new restaurant is located in the existing two story Prell Building at 32nd and Zuni and was the site of another previous restaurant. We completely replaced the storefront on the ground level and remodeled the first floor and small basement areas used for storage. The fun interior accentuates a highly regarded menu with old fashioned lighting fixtures, built-in Bar and Benches, and state of the art Heating and Ventilating equipment.

Saj Mediterranean Grill - The Streets at South Glenn

Centennial, Colorado – Year Built: 2008

Saj Mediterranean Grill is located at the corner of South York Street and The Commons at The Streets at SouthGlenn.  It is across the street from Whole Foods and a perfect location to advertise their healthy menu selections. The Lime Green accent offsets the warm Lime Stone veneer at the front of the serving counter. The Saj bread is traditional Mediterranean flat bread and is mixed, proofed, flattened and grilled on a Saj Grill or Crepe Hot Plate. Copper Counter Tops and pastel green and peach paint scheme provide a warm back drop for a unique dining experience.

The original Saj Mediterranean Grill is located at the corner of South York Street and The Commons at The Streets at SouthGlenn.  The second location is located inside the Park Meadows Mall and still boasts a Healthy Menu using all natural ingredients. Longhorn BBQ

Spokane, WA - Year Built: 1994

Cost: $250k, Area: 9,000 s.f.

Role: Designer, Project Architect at Design Alliance Architects

The Long Horn Barbecue Restaurant located in the village of Millwood just east of Spokane is one of several Longhorn Barbecue Restaurants. This Restaurant was the headquarters for the Catering Service. They used several large horse trailers converted into mobile kitchens. The Main Kitchen had (2) wood fired pits, full service kitchen and a small dining area and drive-thru window. The client wanted to double the size of the building but wanted to keep the kitchen operational. The new addition would be for dining and banquet plus the new main office for all their restaurants. In order to keep the kitchen operating during construction, we designed the new roof to match the existing roof pitch and built on top of the existing. We extended the chimneys and provided access to them by providing access from the new second floor banquet room thru access doors that opened up onto the existing roof.

Pinche Tacos

York and Colfax – Denver, Colorado –

I met Kevin Morrison in early 2007 when he was looking to start a new restaurant in the Prell Building at 32nd and Zuni, (the same location as Pasquini’s). I designed and produced the construction documents but Kevin decided not to go through with the project. He sold his interest to Tony Pasquini who hired me to re-design the space plan. Kevin started with the Spicy Pickle Restaurants and moved onto a Food Truck featuring Street Tacos, (small corn tortillas with new age fillings based on South West Recipes). The Restaurant at York and Colfax is in the same (3) Story Building as Okinawa Sushi. The Landlord / Owner of the Building are remodeling the upper floor for offices. The Menu remains true to the Food Truck so the Kitchen Equipment and area required for Equipment was minimal. The Bar area is centrally located with smaller dining tables located along the windows. There is also (2) communal tables, one up front close to the entry and the other located toward the back.
